Our flavored whiskies are made from all natural ingredients. We simply distill new-make whiskey, blend it with freshly juiced fruit, then finish it in used bourbon barrels before hand bottling and labeling each bottle.

Our new make whiskey is a mash of corn, malted barley and rye.  Using a blend of blackberries harvested throughout the Rocky Mountains, we crush the berries using a bladder press and collect the juice.  We then retain the juice and macerate it.  The juice is then strained (NOT filtered!).  We then blend our new make whiskey with the blackberry juice, then finish it in used bourbon barrels for approximately 4-6 months.

We do this for several reasons.  First,  aging adds barrel flavors to the complexity of our whiskey.  Second, the char in the barrel reduces the “young” flavors of the new make whiskey.  Third, the wood of the barrels ‘breathe’ and allow oxygen in and this oxidizes the fruit juice, which in turn make more complex flavor compounds.

Once the whiskey has aged we hand bottle and label each bottle. Each numbered batch represents a single barrel. (If this was Scotch it would be called ‘single-single’, which means that it was bottled from a single barrel from a single distillery.  Since each barrel will produce a slightly different flavor, each barrel is unique.  Thus, our blackberry whiskey is perfect for those whiskey-lovers who are yearning to try something new and for those on the look-out for something different.
