Yes, We Have A Dunder Pit
As it turns out, the world of social media was fascinated to learn this week that there is indeed a dunder pit behind Leopold Bros distillery, where Todd deposits all sorts of fruits and whatnot to decompose in the summer heat. Before you get too excited, it’s not a rotting pool of bacteria with a goat’s head floating on top of it. We’re not remote enough to have that kind of biohazard just casually sitting on our property. It is indeed a pit, which you can see in the above photo, but it’s a contained pit. The matter is lowered down into the open trap doors inside of a separate vessel, within which it can easily be removed and cleaned at a later date.
We are also not using the dunder to distill rum, much to the chagrin of our superfans. However, the boost of esters into other distillates is still something we’re excited to explore! Adding a rich stew of acids and bacteria to our other ferments is proving to be an exciting way to add extra flavor into many other spirits besides rum.
